<p>First time at Surfas! Andy Matsuda, Executive Chef and CEO of <a href="http://www.sushischool.net/" target="_blank"><strong>Sushi Chef Institute</strong> </a>will be teaching a “hands on” Chirashi Sushi Making Class!</p>
<p>In Japan, Girl&#8217;s Day is celebrated on March 3 and Chirashi sushi is one of the traditional dishes.  Chirashi or “scattered sushi” is not rolled, instead favorite ingredients such as boiled shrimp, salmon roe, squid, and sea urchin are composed on plates or bowls making brilliant colorful almost kaleidoscopic presentations. The bright colors and vibrant flavors make this dish as appealing to look at as it is to eat and without a fixed recipe it is perfect for an easy main course or appetizer.</p>
<p>Chef Andy Matsuda has been in the restaurant business his entire life, starting with his family’s restaurant in Kobe, Japan. In 2002 he opened the Sushi Chef Institute in Downtown Los Angeles with the goal of cultivating chefs who understand Japanese cuisine and prepare food that is as beautiful to the eye as it is delicious to the palate. Since opening the school has consistently produced top quality award winning sushi chefs. Graduates from the school won the coveted Japanese Restaurant Association Sushi Chef Competition in both 2008 and 2009.</p>
