  • Pecan Brownies
    • Fold 5.5 oz of 75% melted couverture into 12oz of soft butter
    • Whisk together 10.5 oz whole eggs, 24oz sugar, until pale white
    • Add 6oz flour to 7 oz of chopped pecans
    • Add 1/3 of the egg mixture to the chocolate mixture
    • Add the rest of the mixture then add the flour/pecan mix
    • Spread on a cookie sheet and bake at 350 for 10-12 minutes
  • Espresso Cremeux
    • Whisk 8oz egg yolks with 6oz of sugar, do not whip!
    • Add 1 qt of warm cream infused with 2oz of ground espresso beans, poach the mixture to 180° F
    • Add 4 gelatin sheets, bloomed
    • Strain and cool

 

  • Truffle Mousse
    • Add 13oz of boiled cream to 13oz of 75% chocolate, let cool to 100°F
    • Fold in the chocolate mixture 10oz of whipped cream
  • Chocolate Ganache
    • Pour 2 cups of boiled cream over 16oz of chocolate
    • Mix by hand slowly
